100% Rye whiskey from Union Horse Distilling Co., grain sourced from North Dakota and Minnesota. Milled and mashed on site, fermented for 5-7 days to approximately 15% ABV; sour mash method. Distilled in a 1,900 L copper pot-column hybrid still one time to approximately 72.5% ABV. Aged in char #3, 30-gallon honey-combed barrels from the Black Swan Cooperage. Carbon paper filtered; un-chillfiltered. 57.2% ABV. 952 bottles/year
